NC Egg Association | Summer Meal Planning Guide: Easy, Protein-Packed Recipes

As the school year winds down and families transition into summer mode, simple, quick and nutritious meals are a necessity! To fuel both kids and adults, eggs are the perfect solution.

From simple packable lunches for camp to prepping fresh dinners for the week ahead and managing snack time, check out these wholesome kid-approved recipes to kick off summer.

Nutritious Breakfast:

Air Fryer Egg Bites: Start the day with protein-packed bites that are easy to customize and perfect for busy mornings. Use up and sneak in leftover vegetables to make Broccoli Cheddar bites or Mediterranean bites. If you prefer a bit of a kick, mix in chopped green chiles or jalapeño pepper and top with salsa, sour cream and chopped cilantro.

Pro Tip: Silicone molds make cleanup a breeze and help the egg bites release easily.

Breakfast Pizza Pockets: Looking for an option that can be prepped ahead of time, then easily reheated in the toaster oven? Try pizza pockets with flaky pastry crust, creamy scrambled eggs, pizza sauce and pepperoni. Plus, these can easily serve as a filling snack, served with ranch dressing!

Yummy Snacks:

Buffalo Egg Salad Celery Sticks: Whip up a healthy and filling snack in no time with powerful, protein-packed egg salad. Spoon the egg salad into celery sticks for a fun twist on ants on a log!

Veggie Egg Pops: Get the kids involved making their own dippable snack! Simply cut celery and carrot sticks, then insert them into hard-boiled eggs. Serve with an assortment of veggies, like red pepper sticks, cherry tomatoes or broccoli, or dips like guacamole, hummus, tzatziki sauce or ranch.

Pro Tip: Sneak in veggies ahead of dinner time and beat the pre-dinner hunger rush by offering a plate of Veggie Egg Pops, dips and veggies!

Easy Dinners:

Egg and Veggie Rice Bowl: Got leftover rice and veggies? Scramble eggs to add protein for an easy 30-minute meal. Add leftover veggies or frozen veggies, plus chicken, for a balanced meal that will keep everyone satisfied throughout busy summer evenings.

Baked Cheesy Pasta with Broccoli and Pear: Level up mac-n-cheese night with a twist the family will never see coming – broccoli and pears! Savory, sweet and cheese to the max will make this a dinner everyone will be asking for on repeat.
