Tailgating Tart

Makes: 8 appetizer servings


2 sheets frozen puff pastry (17.3-oz pkg.), thawed
1 cup chopped or shredded cooked ham
¾ cup mushroom slices
2 cups shredded Swiss cheese
4 eggs
½ cup reduced fat sour cream
½ cup chopped chives
½ teaspoon salt
¼ teaspoon pepper


Unfold pastry sheets and place on 2 baking sheets, sprayed with vegetable spray. Turn edges up around the rim, about ½-3/4-inch. Sprinkle pastry with ham, mushrooms and Swiss cheese. In a small bowl beat together eggs, sour cream, chives, salt and pepper. Gently pour half of egg mixture over top of filling on each pastry and spread to make sure liquid is absorbed in filling. Bake in 400ºF oven for 25 minutes or until tart is puffed and golden on top and filling is set. Cut each tart into 2 pieces cutting on the diagonal and then cutting again on the diagonal. Each tart may also be cut into small squares for appetizer servings. To garnish sprinkle with additional chopped chives or a few whole chives. Yield: 8 appetizer servings. **May freeze pastry with fillings for 15-30 minutes, before egg mixture is added to ensure rim stays firm.
