Ingredients
3 cups fresh NC Sweet potatoes, cooked and mashed
2 eggs, slightly beaten
¼ cup milk
1 teaspoon vanilla
1 cup sugar
½ teaspoon salt
1 stick butter, melted
2 Tablespoons maple syrup
1 Tablespoon honey
Topping
1/3 stick butter, softened
1 cup brown sugar
1/3 cup flour
1 cup chopped nuts
Instructions
Mix all the ingredients from the sweet potatoes to the honey in a large bowl. Pour into a greased 2 1/2-quart casserole dish sprayed with non-stick cooking spray. Mix all topping ingredients and sprinkle over top of the sweet potato mixture. Bake at 350 degrees for 35 minutes.
