Reuben Quiche

Makes: 4-6 Servings


1 9-inch Deep Dish unbaked pie crust in pan
1- 1/2 cups diced or shredded corned beef
3/4 cup sauerkraut, squeezed and drained
1-1/2 cups shredded Swiss cheese
4 eggs
3/4 cup milk or heavy cream
2 tablespoons finely chopped onion
1/2 teaspoon dry mustard

Serving topping optional: Thousand Island Dressing


Preheat oven to 375 F. Spread corned beef evenly over bottom of pie crust. Top evenly with sauerkraut, onion and cheese. Beat together eggs, milk and dry mustard. Pour over cheese. Bake for 50 to 60 minutes, until eggs are set. (Test for doneness with a table knife inserted in center of the quiche and it comes out clean)

May serve with a dollop of Thousand Island Dressing!
