In your skillet, add your fat of choice, add two table spoons of water and two eggs into a bowl, whisk until combined and pour into the pan. As the egg sets, tilt your pan and let the liquid egg fill in the edges of the pan until set. Once set, add toppings of your choice on one half of the egg, fold over empty side, and then slide out of pan onto a plate.
