Microwave Coffee Cup Scramble

Have a healthy breakfast in 2 minutes! Microwave eggs and veggies in a coffee cup to make an easy, high-protein scramble.

2 eggs
2 tbsp milk
2 tbsp Cheddar cheese
1 tbsp chopped tomato
1 tsp minced pickled jalapeño pepper Pinch each salt and pepper


1. WHISK together eggs, milk, cheese, tomato, jalapeño, salt and pepper.
2. POUR into well-greased 12-oz microwave-safe
3. MICROWAVE on High for 30 seconds; stir. Microwave for 70 to 80 seconds or until eggs are puffed and set.

Pro Tips

Substitute prepared salsa for the chopped tomato and jalapeno if desired.
