Lox and Bagel Frittata

Makes: 6 Servings


10 Eggs
½ cup milk
1 cup whipped cream cheese
¾ tsp. salt
½ tsp. pepper
1 cup smoked salmon, shredded
¼ cup chopped red onion
1 jar capers, drained
1 beefsteak tomato, sliced
Bagel chips


In a blender, combine eggs, milk, cream cheese, salt and pepper until well mixed. Stir in salmon, red onion and capers. Pour mixture into a greased pie dish and bake in a preheated oven at 350 degrees for 30-40 minutes or until set in the middle.

Top with sliced tomatoes and serve with bagel chips.
