Guacamole Toast and Eggs

3 avocados – peeled, pitted, and mashed
1 lime, juiced
1 tsp. salt
1/2 cup scallion, chopped fine
3 Tbsp. fresh cilantro, chopped
6 grape tomatoes, diced
1 tsp. minced garlic
¼ tsp. jalapeno, chopped fine (optional)
French bread cut into 4 slices, 1/4’” thick, lightly toasted
4 Eggs, cooked to your preference
Hot sauce, optional


In a medium bowl, mash together the avocados, lime juice, and salt. Stir in scallion, cilantro, tomatoes, garlic, and jalapeno. Refrigerate 1 hour or use immediately. Spread avocado mixture on the toast and top with an egg. The eggs can be prepared: fried, scrambled, boiled or poached. Optional: drizzle with hot sauce.
