Makes: 8-10 Servings
Ingredients
4 cups finely shredded sharp cheddar cheese
½ cup flour
1 teaspoon baking powder
1 teaspoon salt
2 cups small curd cottage cheese
½ cup butter, melted
3 (4-ounce) cans chopped green chilies
1 large onion, finely chopped
10 eggs, beaten
Optional condiments – chunky salsa, sour cream, sliced avocado or guacamole
Instructions
In a large bowl toss cheese with flour, baking powder and salt. Add cottage cheese, butter, green chilies, onions and mix. Add beaten eggs and stir to mix completely. Spray 13 X 9 X 2-inch baking pan with vegetable spray. Bake at 350 F for 40-50 minutes or until knife inserted comes out clean. Serve if desired with salsa, sour cream, avocado or guacamole. If transporting to game site, cover with heavy duty foil, venting one small corner. Place in cooler lined with newspapers, beach towels or heated packs. Place hot foods in separate cooler from cold foods. Will keep hot for 2-3 hours.
