Makes: 6 to 8 Servings
Prepared single pie pastry for 9-inch pie plate
1-1/4 cups sugar
2 tablespoons flour
4 eggs, beaten
1 cup evaporated milk
1 teaspoon vanilla
1. Preheat oven to 425 degrees F.
2. Unfold pie pastry and gently press onto 9-inch pie plate.
3. Combine sugar and flour in large mixing bowl. Stir in beaten eggs, milk and vanilla until well blended. Pour egg mixture into pie shell. Bake for 10 minutes.
4.Reduce oven temperature to 350 degrees F; continue baking an additional 30 minutes or until knife inserted near center comes out clean. Cool pie on wire rack. Refrigerate until ready to serve.
Delicious plain or topped with whipped cream and fresh berries.
