Butterscotch Bars

4 eggs
1 ( 16 ounce ) package dark brown sugar
1 (3 ounce ) package instant butterscotch pudding mix
2 cups biscuit mix
1 ¼ cups chopped pecans, divided
1 ( 6 ounce ) package butterscotch morsels
1 teaspoon vanilla


Preheat oven to 350F. In large mixing bowl, with electric mixer, beat eggs until frothy. Gradually add sugar and pudding mix, beating until well blended. With electric mixer on low, add biscuit mix, 1 cup chopped pecans, butterscotch morsels, and vanilla, mixing just until all ingredients are blended. Spread batter in a greased and floured 13x9x2-inch pan. Bake at 350 for 35-45 minutes. Cool and cut into bars. Sprinkle with remaining ¼ cup pecans and serve with a dollop of whipped topping.
