Broccoli Cornbread Bites

Makes: 36 Servings


1 (10-ounce) package frozen, chopped broccoli

1 (7.5 or 8.5-ounce) package corn muffin mix

½ c butter or margarine, melted

1 large onion, finely chopped

4 eggs, beaten

2 c shredded sharp cheddar cheese



Cook broccoli in microwave according to package directions; drain.  Combine in a large bowl broccoli, corn muffin mix, butter, onion and mix.  Stir in eggs and cheese and mix completely.  Spoon batter into miniature muffin pans; fill each to the top of muffin cup. Bake at 350 F for 25 minutes or until golden on top.  Or, spray a 13 X 9 X-2-inch baking pan with vegetable spray.  Pour batter into pan and bake at 350 F for 30-35 minutes.

If transporting to game site, cover with heavy duty foil, venting one small corner.  Place in cooler lined with newspapers, beach towels or heated packs.  Place hot foods in cooler separate from cold foods.  Will keep hot for 2-3 hours.
