I have the pleasure of working with North Carolina’s egg farmers every day—and that is something special. While leading the North Carolina Egg Association over the past six years, I’ve been fortunate to see just how remarkable this community truly is. From the mountains to the coastline, our egg farmers are among the most dedicated and resilient individuals that I know, remaining steadfast in their mission to produce safe, nutritious eggs for families across our state and beyond.
What inspires me most is their sense of purpose. Our farmers see feeding people as a responsibility, and they approach their work with heart and humility. I’ve been fortunate to get to know many of our egg farmers personally, including their families and employees. I see how much pride they take in caring for their hens and providing for their community. That personal connection fuels my own work.
When I speak on behalf of North Carolina’s egg farmers, I think of the good, hardworking people doing their best to keep fresh eggs on the shelves while taking care of their families and neighbors. This motivates me to represent them with the same dedication they show every day.
Beyond their farms, egg farmers play a vital role in sustaining our rural communities. In many small towns. They regularly donate eggs to local food banks, sponsor events and serve their churches. Their generosity often goes unnoticed, but their impact runs deep. In many ways, they are the backbone of their local economies, helping their towns thrive through both opportunity and service.
If there’s one thing I hope people remember when they pick up an egg carton at the grocery store, it’s that those eggs were produced right here in North Carolina. They come from families who care deeply about what they do and work tirelessly to ensure you can enjoy fresh, wholesome eggs every day.
While I’m grateful for their work every day of the year, the holiday season brings that appreciation into sharper focus. In my own family, eggs are at the heart of many of our favorite traditions. Every Christmas, I make homemade eggnog for the whole family—a beloved tradition. Deviled eggs are another family staple, and we enjoy them year-round as both an appetizer and as part of a meal. My very favorite egg recipe is a classic breakfast casserole—it’s simple, hearty and endlessly versatile, the kind of dish the whole family can enjoy!
As we enter this season of gratitude, I hope North Carolinians will join me in giving thanks to our egg farmers for their perseverance, generosity and commitment to feeding our communities. Behind every egg is a story of hard work and heart, and I couldn’t be prouder to work alongside the people who make it possible.
