1. Hard Boiled, Easy Eggs

One of the simplest and easiest ways to make back-to-school less hectic is meal-prepping. Hard-boiled eggs are the easiest grab-and-go snack, breakfast, or lunch that you can prepare before the week even starts. Throughout the week, you can grab a hard-boiled egg, sprinkle some salt and pepper, or make it a little “eggstra” by slicing the egg and putting it on a toasted bagel with bacon and cheddar cheese (see recipe here).

In the shell, hard-cooked eggs can be refrigerated safely up to one week. Refrigerate in their original carton to prevent odor absorption. Once peeled, eggs should be eaten within two days.
