1 pound hot sausage, cooked and crumbled
1 pound (4 cups) shredded Sharp Cheddar cheese
1 (4 ounce) can green chili peppers
1/2 Tablespoon chili powder
Preheat oven to 350 degrees. Cook sausage in frying pan, crumble and drain thoroughly. Spray 9″ x 13″ casserole dish with cooking spray. Spread cooked sausage evenly over the bottom of casserole dish. Cover sausage with grated cheese. Sprinkle chili peppers evenly over cheese. Beat eggs and chili powder well and pour over casserole. Bake in preheated oven for 30 minutes. Cool slightly and cut into bite-size squares.
Serve plain or with salsa and sour cream.
