1/2 cup confectioner’s sugar
1 1/4 cup flour, divided
1/2 cup butter, softened
1 cup Classic Cooked Egg Nog*
6 eggs, beaten
2 cups granulated sugar
1 teaspoon ground nutmeg
1 teaspoon vanilla
Additional confectioner’s sugar, optional
Preheat oven to 350ºF. To make crust, in medium bowl, stir together 1/2 cup confectioners sugar and 1 cup flour until well mixed. Cut in butter with pastry blender or fork until mixture is crumbly. Evenly pat into 13×9-inch baking pan. Bake for 12 to 15 minutes, or until edges begin to brown.
Meanwhile, in large bowl, beat together egg nog, eggs, granulated sugar, 1/4 cup of the remaining flour, nutmeg, and vanilla until thoroughly blended. Pour mixture over baked crust. Bake until knife inserted in center comes out clean, about 25 to 30 minutes. Cool and sprinkle with additional confectioner’s sugar, if desired. Cut into squares. Refrigerate any leftovers.
Note: Do not use purchased egg nog in these squares.
