· Eggs are a naturally nutrient-dense food, which means they have a high proportion of nutrients to calories.  One large egg has only 70 calories and provides 13 essential nutrients in varying amounts.  

· On egg provides 6 grams of protein, or 12% of the Recommended Daily Value.  Eggs provide the highest quality protein found in any food because they provide all of the essential amino acids our bodies need in a near-perfect pattern.  

· Eggs have varying amounts of four of the nutrients pregnant women need most: choline, protein, foliate and iron. Choline, a recently recognized essential nutrient, contributes to fetal brain development and is important in nerve tissue development, which helps prevent birth defects.

· Eggs provide small amounts of lutein and zeaxanthin, two nutrients which are part of the carotenoid family (like beta-carotene in carrots) that contribute to eye health and help prevent common causes of age-related blindness.  Research suggests that lutein from eggs may be more bio available, meaning more easily absorbed by the body, than lutein from richer sources.

Remember to:
  • Purchase eggs from refrigerated cases
  • Store eggs properly in the refrigerator in their original carton
  • Use safe food handling rules when preparing food:
     Clean:  Wash hands and surfaces often
     Separate:  Don't cross-contaminate
     Cook:  Cook to proper temperatures.  
     Chill:  Refrigerate promptly
  • Cook eggs and dishes containing eggs to 160 degrees.
